Green Vegetable Bake
1 can cream of mushroom soup
1/3 cup mayonnaise
1 ½ cups cheddar cheese (shredded)
6 cups broccoli (chopped)
300g spinach (chopped)
Preheat oven to 180°C and grease your baking dish.
Roll out the phyllo pastry thinly and cut to the size of your baking dish.
Lightly beat the eggs and finely chop the onion. In a large bowl, combine the eggs, mushroom soup, mayonnaise, cheese and onion.
Fold in broccoli and spinach. Layer the pastry in your baking dish and put the mixture inside.
Bake uncovered for 20-25 minutes or until the top is lightly browned.
Cooks in: 35 minutes
